Update ruby version (3)

We would like you to update or make it possible to install ruby version 3. As of now only ea-ruby27 is available.

While this isn't currently on our roadmap, I've left it open for discussion to see if it garners more votes. I expect this to be available as part of the product once 2.7 comes closer to EOL. You could also try using Ubuntu which should support this natively.
